The salary of bakers is influenced by several factors. The canton plays an important role, since salaries in Thurgau, Zurich, and French-speaking Switzerland tend to be above the national average, while they are lower in more rural regions such as Solothurn or Glarus. Professional experience also has an effect, although salary growth in the baking trade tends to be relatively flat over time. The type of business influences earnings as well: larger production companies or additional qualifications as a pastry chef or confectioner often lead to somewhat higher salaries than in small artisan bakeries. In addition, irregular working hours with early morning and weekend shifts, as well as company size, play a role in determining the overall income.
Bakers produce bread, rolls, and other baked goods every day, from preparing the dough to shaping it and baking it in the oven. The profession has changed over the years: alongside the traditional artisan bakery with in-store sales, there is now also industrial production of baked goods in larger manufacturing facilities, which requires different workflows and technology. Many bakers extend their training with an additional qualification as a pastry chef or confectioner and then also produce fine pastries, cakes, and desserts. Work takes place mainly in bakehouses and bakeries, often in the early morning hours, to have fresh goods ready for sale on time.
